{"id":99,"date":"2014-12-09T00:45:17","date_gmt":"2014-12-09T00:45:17","guid":{"rendered":"http:\/\/www.theorthopractice.com.au\/blog\/?p=99"},"modified":"2016-08-16T01:43:13","modified_gmt":"2016-08-16T01:43:13","slug":"coconut-snowballs","status":"publish","type":"post","link":"https:\/\/www.theorthopractice.com.au\/blog\/coconut-snowballs\/","title":{"rendered":"Coconut snowballs"},"content":{"rendered":"<ul>\n<li>250g packet plain sweet biscuits<\/li>\n<li>1\/2 cup desiccated coconut<\/li>\n<li>1\/2 x 100g packet multi glace cherries, finely chopped<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>395g can sweetened condensed milk<\/li>\n<li>1 1\/2 x 375g packets white chocolate melts<\/li>\n<li>2 teaspoons desiccated coconut, extra<\/li>\n<\/ul>\n<p><strong>Step 1.<\/strong> Line a large baking tray with baking paper. Place biscuits in a food processor. Process until mixture resembles fine breadcrumbs. Transfer to a large bowl. Add coconut, cherries, vanilla and milk. Stir until well combined.<\/p>\n<p><strong>Step 2.<\/strong> Using damp hands, roll 1 level tablespoon of mixture into a ball. Place on prepared tray. Repeat with remaining mixture. Freeze for 1 hour or until firm.<\/p>\n<p><strong>Step 3.<\/strong> Place chocolate in a heatproof, microwave-safe bowl. Microwave on medium (50%) for 3 to 4 minutes, stirring halfway during cooking with a metal spoon, or until melted and smooth.<\/p>\n<p><strong>Step 4.<\/strong> Using a fork, dip 1 snowball into melted chocolate, shaking off excess. Return to tray and sprinkle immediately with a little of the extra coconut. Repeat with remaining snowballs, melted chocolate and coconut. Refrigerate until set.
