{"id":6,"date":"2015-01-04T07:04:50","date_gmt":"2015-01-04T07:04:50","guid":{"rendered":"http:\/\/theorthopractice.com.au\/blog\/?p=6"},"modified":"2016-08-16T01:43:04","modified_gmt":"2016-08-16T01:43:04","slug":"potato-and-avocado-salad","status":"publish","type":"post","link":"https:\/\/www.theorthopractice.com.au\/blog\/potato-and-avocado-salad\/","title":{"rendered":"Potato and avocado salad"},"content":{"rendered":"<ul>\n<li>150g small green beans, trimmed<\/li>\n<li>150g small butter beans, trimmed<\/li>\n<li>800g kipfler potatoes, scrubbed<\/li>\n<li>100g sliced pancetta<\/li>\n<li>2 avocados, halved, stones removed, peeled, sliced<\/li>\n<li>1\/3 cup whole-egg mayonnaise<\/li>\n<li>1 large lime, rind finely grated, juiced<\/li>\n<li>1\/3 cup dill sprigs<\/li>\n<\/ul>\n<p><strong>Step 1<\/strong> Bring a large saucepan of salted water to the boil over high heat. Add green beans and butter beans. Cook for 3 minutes or until bright green and tender. Using a slotted spoon, transfer to a colander and refresh under cold water. Pat dry with paper towel.<\/p>\n<p><strong>Step 2<\/strong> Add potatoes to saucepan and cook for 12 minutes or until just tender. Drain and set aside to cool slightly. Cut in half lengthways.<\/p>\n<p><strong>Step 3<\/strong> Preheat grill on high heat. Place pancetta on a baking tray and grill for 5 minutes or until crisp. Drain on paper towel. Tear into small pieces.<\/p>\n<p><strong>Step 4<\/strong> Arrange beans, potatoes, pancetta and avocado on a platter. Combine mayonnaise, lime rind and 1 1\/2 tablespoons lime juice in a bowl. Pour dressing over salad.
