{"id":415,"date":"2018-03-15T00:30:44","date_gmt":"2018-03-15T00:30:44","guid":{"rendered":"http:\/\/www.theorthopractice.com.au\/blog\/?p=415"},"modified":"2018-08-15T00:39:19","modified_gmt":"2018-08-15T00:39:19","slug":"red-lentil-soup-with-caramelised-onion","status":"publish","type":"post","link":"https:\/\/www.theorthopractice.com.au\/blog\/red-lentil-soup-with-caramelised-onion\/","title":{"rendered":"Red Lentil Soup with Caramelised Onion"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>4 brown onions, thinly sliced<\/li>\n<li>2 teaspoons ground cumin<\/li>\n<li>2 teaspoons ground coriander<\/li>\n<li>2 garlic cloves, crushed<\/li>\n<li>2 potatoes, peeled, chopped<\/li>\n<li>1 tablespoon vegetable stock powder<\/li>\n<li>2 cup (400g) red lentils, rinsed<\/li>\n<li>1\/4 cup coriander leaves<\/li>\n<li>1 tablespoon pepitas (pumpkin seeds)<\/li>\n<\/ul>\n<h2>Procedure<\/h2>\n<ol>\n<li>Heat the oil in a large saucepan over medium heat. Add onion and cook, stirring occasionally, for 15 mins or until onion is caramelised. Reserve half the onion in a bowl.<\/li>\n<li>Add cumin, ground coriander and garlic to pan and cook, stirring, for 1 min or until fragrant. Add the potato, 3 1\/2 cups (875ml) of water and stock powder and bring to a simmer. Cook, covered, for 10 mins or until potato is tender.<\/li>\n<li>Add lentils and bring to a simmer. Cook, covered, for 6-8 mins or until lentils are tender. Remove from heat. Use a stick blender to carefully blend soup until smooth.<\/li>\n<li>Add coriander leaves and pepitas to reserved onion.
