{"id":403,"date":"2018-06-15T00:14:50","date_gmt":"2018-06-15T00:14:50","guid":{"rendered":"http:\/\/www.theorthopractice.com.au\/blog\/?p=403"},"modified":"2018-08-15T00:25:48","modified_gmt":"2018-08-15T00:25:48","slug":"sweet-potato-pizza-balls","status":"publish","type":"post","link":"https:\/\/www.theorthopractice.com.au\/blog\/sweet-potato-pizza-balls\/","title":{"rendered":"Sweet Potato Pizza Balls\u00a0"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<ul>\n<li>500g sweet potato, peeled, cut into 3cm pieces<\/li>\n<li>35g sliced salami, finely chopped<\/li>\n<li>25g (1\/3 cup) finely grated cheddar<\/li>\n<li>2 tablespoons pizza sauce<\/li>\n<li>50g (1\/3 cup) plain flour<\/li>\n<li>2 eggs, lightly whisked<\/li>\n<li>50g (1 cup) panko breadcrumbs<\/li>\n<li>Vegetable oil, to shallow-fry<\/li>\n<li>Basil pesto, to serve (optional)<\/li>\n<\/ul>\n<p>Makes 15<\/p>\n<h2>Procedure<\/h2>\n<ol>\n<li>Cook the sweet potato in a steamer basket over a saucepan of simmering water for 10-12 minutes or until tender enough to mash. Transfer to a heatproof bowl. Set aside to cool slightly.<\/li>\n<li>Use a potato masher to mash the sweet potato until smooth. Stir in the salami, cheddar and pizza sauce until combined. Roll level tablespoonful\u2019s of the mixture into balls. Place on a tray lined with baking paper.<\/li>\n<li>Place the flour, egg and breadcrumbs in separate shallow bowls. Roll the balls in flour, dip in egg and then roll in breadcrumbs to coat. Return to the prepared tray.<\/li>\n<li>Add enough oil to a large frying pan to reach a depth of about 1cm. Heat over medium-high heat. Working in batches, shallow-fry the balls, turning often, for 5 minutes or until crisp and golden. Transfer to a plate lined with paper towel to drain.
