{"id":402,"date":"2018-05-15T00:14:48","date_gmt":"2018-05-15T00:14:48","guid":{"rendered":"http:\/\/www.theorthopractice.com.au\/blog\/?p=402"},"modified":"2018-08-15T00:25:28","modified_gmt":"2018-08-15T00:25:28","slug":"quick-cook-chicken-risotto","status":"publish","type":"post","link":"https:\/\/www.theorthopractice.com.au\/blog\/quick-cook-chicken-risotto\/","title":{"rendered":"Quick-Cook Chicken Risotto\u00a0\u00a0"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<ul>\n<li>1 tablespoon olive oil<\/li>\n<li>1 brown onion, finely chopped<\/li>\n<li>400g chicken thigh fillets, fat trimmed, diced<\/li>\n<li>2 garlic cloves, crushed<\/li>\n<li>250g arborio risotto rice<\/li>\n<li>1\/2 cup (125ml) white wine<\/li>\n<li>600ml salt reduced chicken style liquid stock<\/li>\n<li>1\/3 cup (25g) grated Parmesan cheese, plus 2 tablespoons extra to serve<\/li>\n<li>1 cup (200g) sweet corn kernels<\/li>\n<li>200g grape tomatoes, halved<\/li>\n<li>75g baby spinach leaves<\/li>\n<\/ul>\n<p>Serves 4<\/p>\n<h2>Procedure<\/h2>\n<ol>\n<li>Heat oil in a large heavy based saucepan over medium-high heat. Cook onion and chicken stirring occasionally, for 3-4 minutes, or until golden. Add garlic and cook for 30 seconds.<\/li>\n<li>Add rice and stir to coat grains in oil. Add wine and simmer for 1 minute until absorbed. Add stock and bring to the boil. Cover, reduce heat to low and simmer for 10-12 minutes or until rice is al dente and stock is absorbed.<\/li>\n<li>Stir in cheese, corn, tomatoes and spinach. Season. Cover and set aside for 2 minutes.
