{"id":328,"date":"2017-09-04T01:28:04","date_gmt":"2017-09-04T01:28:04","guid":{"rendered":"http:\/\/www.theorthopractice.com.au\/blog\/?p=328"},"modified":"2017-09-04T01:28:04","modified_gmt":"2017-09-04T01:28:04","slug":"corn-fritters","status":"publish","type":"post","link":"https:\/\/www.theorthopractice.com.au\/blog\/corn-fritters\/","title":{"rendered":"Corn fritters"},"content":{"rendered":"<p>Here&#8217;s an easy meal to whip up for breakfast, lunch and tea &#8211; and why not throw a couple into the school lunch box too?<\/p>\n<p>You will need&#8230;<\/p>\n<ul>\n<li>1 cup self-raising flour<\/li>\n<li>2 eggs<\/li>\n<li>1\/3 cup milk<\/li>\n<li>2 x 420g cans corn kernels, drained<\/li>\n<li>1 tablespoon chopped chives<\/li>\n<li>100g fetta cheese, crumbled or diced<\/li>\n<li>30g piece cold butter<\/li>\n<\/ul>\n<p>Then all you have to do is&#8230;<\/p>\n<ol>\n<li>Place flour into a large mixing bowl and make a well in the centre. Use a fork to whisk eggs and milk in a jug and pour gradually into the flour, stirring gently to combine. Fold in corn, chives and fetta. Careful not to over-mix or the fritters will become tough.<\/li>\n<\/ol>\n<ol start=\"2\">\n<li>Wrap butter in a piece of paper towel. Heat a large frying pan over medium heat and wipe with the butter to grease. Cook in batches by dropping 1\/4 cupful\u2019s of mixture into the pan at a time.
