{"id":123,"date":"2013-08-09T01:06:09","date_gmt":"2013-08-09T01:06:09","guid":{"rendered":"http:\/\/www.theorthopractice.com.au\/blog\/?p=123"},"modified":"2016-08-18T01:25:17","modified_gmt":"2016-08-18T01:25:17","slug":"banana-and-cinnamon-sugar-whoopie-pies","status":"publish","type":"post","link":"https:\/\/www.theorthopractice.com.au\/blog\/banana-and-cinnamon-sugar-whoopie-pies\/","title":{"rendered":"Banana and cinnamon sugar whoopie pies"},"content":{"rendered":"<ul>\n<li>125g butter, softened<\/li>\n<li>1 cup (200g) packed brown sugar<\/li>\n<li>1 egg<\/li>\n<li>2\/3 cup (160ml) mashed banana<\/li>\n<li>1\/2 cup (125ml) sour cream<\/li>\n<li>2 cups (300g) plain flour<\/li>\n<li>1\/2 teaspoon bicarbonate of soda<\/li>\n<li>1\/2 teaspoon baking powder<\/li>\n<\/ul>\n<p><strong>Cinnamon cream cheese<\/strong><\/p>\n<ul>\n<li>250g cream cheese, softened<\/li>\n<li>60g butter, softened<\/li>\n<li>2\/3 cup (120g) icing sugar mixture<\/li>\n<li>1\/2 teaspoon ground cinnamon<\/li>\n<\/ul>\n<p><strong>Cinnamon sugar<\/strong><\/p>\n<ul>\n<li>1\/2 cup (110g) white sugar<\/li>\n<li>1\/2 teaspoon ground cinnamon<\/li>\n<\/ul>\n<p><strong>Step 1.<\/strong> Preheat oven to 180\u00b0C. Line 4 oven trays with baking paper.<\/p>\n<p><strong>Step 2.<\/strong> Use an electric mixer to beat the butter and sugar in a medium bowl until pale and creamy. Add the egg and beat until well combined.<\/p>\n<p><strong>Step 3.<\/strong> Add the banana, sour cream, flour, bicarbonate of soda and baking powder, in alternate batches, and stir until just combined.<\/p>\n<p><strong>Step 4.<\/strong> Spoon level tablespoons of mixture onto the lined tray, 5cm apart. Bake 2 trays, swapping halfway through cooking, for 10 minutes or until puffed and golden. Set aside for 5 minutes to cool slightly before transferring to a wire rack to cool completely. Repeat with remaining trays.<\/p>\n<p><strong>Step 5.<\/strong> Meanwhile, to make the cinnamon cream cheese, use an electric mixer to beat the cream cheese and butter in a medium bowl until pale and creamy. Add the icing sugar and cinnamon and beat until well combined.<\/p>\n<p><strong>Step 6.<\/strong> Place whoopies, base-side up, on a clean work surface. Spread a little of the cream cheese mixture over the base of half the cakes. Sandwich with remaining cakes and place on oven trays.<\/p>\n<p><strong>Step 7.<\/strong> To make the cinnamon sugar, combine the sugar and cinnamon on a small plate. Roll the edge of 1 cake in the cinnamon sugar to lightly coat. Place on a serving tray.
