{"id":122,"date":"2013-07-09T01:06:08","date_gmt":"2013-07-09T01:06:08","guid":{"rendered":"http:\/\/www.theorthopractice.com.au\/blog\/?p=122"},"modified":"2016-08-18T01:25:24","modified_gmt":"2016-08-18T01:25:24","slug":"quinoa-cakes","status":"publish","type":"post","link":"https:\/\/www.theorthopractice.com.au\/blog\/quinoa-cakes\/","title":{"rendered":"Quinoa cakes"},"content":{"rendered":"<ul>\n<li>2 cups cooked quinoa, cooled<\/li>\n<li>100g feta, crumbled<\/li>\n<li>4 eggs, lightly whisked<\/li>\n<li>1 carrot, peeled, coarsely grated<\/li>\n<li>55g (1\/3 cup) pine nuts, toasted<\/li>\n<li>25g (1\/3 cup) fresh breadcrumbs<\/li>\n<li>20g baby spinach, chopped<\/li>\n<li>2 tbs chopped fresh mint<\/li>\n<li>2 tbs sultanas<\/li>\n<li>1 tbs Masterfoods Moroccan Seasoning<\/li>\n<li>1 tbs honey<\/li>\n<li>1 tsp finely grated lemon rind<\/li>\n<li>Macro Moroccan Pumpkin Dip, to serve<\/li>\n<\/ul>\n<p><strong>Step 1.<\/strong> Combine the quinoa, feta, egg, carrot, pine nuts, breadcrumbs, spinach, mint, sultanas, Moroccan seasoning, honey and lemon rind in a bowl. Season.<\/p>\n<p><strong>Step 2.\u00a0<\/strong>Grease six egg rings and a large frying pan. Heat pan over medium-low heat. Place egg rings in pan. Divide half the quinoa mixture between egg rings. Cook for 3-4 minutes each side or until golden. Remove quinoa cakes from egg rings. Cover to keep warm.
