{"id":11,"date":"2015-06-04T07:05:00","date_gmt":"2015-06-04T07:05:00","guid":{"rendered":"http:\/\/theorthopractice.com.au\/blog\/?p=11"},"modified":"2016-08-16T01:41:54","modified_gmt":"2016-08-16T01:41:54","slug":"lemon-and-thyme-chicken-burgers","status":"publish","type":"post","link":"https:\/\/www.theorthopractice.com.au\/blog\/lemon-and-thyme-chicken-burgers\/","title":{"rendered":"Lemon and thyme chicken burgers"},"content":{"rendered":"<ul>\n<li>4 chicken breast fillets<\/li>\n<li>2 tablespoons thyme leaves<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>1 large lemon, rind finely grated, juiced<\/li>\n<li>4 turkish bread rolls, split<\/li>\n<li>Olive oil cooking spray<\/li>\n<li>50g mixed salad greens<\/li>\n<li>1 avocado, halved, slice<\/li>\n<li>1\/3 cup aioli or whole-egg mayonnaise<\/li>\n<\/ul>\n<p><strong>Step 1.<\/strong> Place chicken between 2 sheets of non-stick baking paper. Using a meat mallet, pound until 1cm thick. Combine thyme, oil, lemon rind and \u00bc cup lemon juice in a shallow ceramic dish. Season with salt and pepper. Add chicken and turn to coat. Cover and refrigerate for 30 minutes, if time permits.<\/p>\n<p><strong>Step 2.<\/strong> Preheat fry pan and grill on medium-high heat. Remove chicken from marinade. Cook chicken for 2 to 3 minutes each side or until cooked through. Meanwhile, spray cut side of rolls with oil. Grill rolls for 1 to 2 minutes or until golden brown<\/p>\n<p><strong>Step 3.<\/strong> Arrange salad greens on roll bases. Top with avocado, chicken and aioli.
